You should check the product grid code of the theme, maybe it is using bootstrap grid which have row and column. If not you should config the products container class of in module settings to load right products grid.

How one can install it on live/staging server?
I have installed it in my local system.
Please check your demo, and I have already send you the screen-shot.
It clearly said that the new page products are append in new row.
And it is default luma theme.

Our module demo is working very well: http://newdemo.demo4coder.com/magento2/men/tops-men.html
The demo did not worked before because our other module js, because our demo site are using for more extensions.
You should check the other module was setup on your site, maybe it make conflict js with infinite scroll or it is using ajax loading for category page too.

It's clearly say that the new products will append in new div.
And you guys has set the product limit in 8-16-32 (even number)
So in odd number, new products will not display after the last product.
Please check the attached screen-shot.
Please try to config the Items (Grid), Items (List) of module settings:
Items (Grid) = .products-grid .product-items .product-item
Items (List) = .products-list .product-items .product-item
Check the demo site again.
